Health food and smoothie cafe expanding with investment from Timberwolves player Rudy Gobert. Adding locations near North Loop and in Wayzata. Focuses on organic, health-conscious menu items including vegan protein bowls and organic egg burritos.
158-unit boutique hotel
158-unit boutique hotel in St. Paul’s Midway neighborhood near Allianz Field, part of United Village development. Expected to attract visitors to nearby colleges including Hamline, Macalester, St. Thomas, and University of Minnesota. Being developed by Snelling-Midway Redevelopment (SMR) with $170 million investment, constructed by Mortenson.
Mo’ Bettahs
Hawaiian-style fast casual chain specializing in Hawaiian barbecue and plate lunch. Will open two Minnesota locations in Burnsville and Maple Grove during summer or early fall 2026. This will be the chain’s first expansion into Minnesota.

160-room, eight-story hotel with 300-space, five-story parking ramp. Project includes retail spaces and community room on ground floor. Developer seeking zoning variances to proceed with construction.

Classic drive-in restaurant reopening under new ownership after being closed for two seasons. Undergoing renovation with updates to walls, ceilings, lighting and new stainless steel countertops. Will continue serving original recipes from previous owners.

French-by-Midwest restaurant from husband and wife team Bjorn and Megan Jacobse, featuring 73 seats with dishes like fish en croute, smoked meats, foie gras, and pastries. Wine program organized by grape rather than region. 20-seat patio for summer.
