Twin Peaks, now operating as Summit Twin Hospitality I LLC, has signed agreements to expand into South Texas including Brownsville, South Padre Island, and Laredo. The chain also signed an area development agreement with New London Hospitality to expand into Connecticut. Currently operates 115 locations nationwide.
La Cocina de Cobre
Mexican-inspired restaurant opening at Six Flags Fiesta Texas in the Crackaxle Canyon Steampunk District. Replaces Bubba’s Burgers. Features quesa birria tacos, carnitas, flautas, and chimichangas with San Antonio-inspired flavors and live mariachi music.
DalMoros Fresh Pasta
Venetian-born fast-casual fresh pasta chain opening inside a Walmart Supercenter. Franchise operator David Caruso is targeting an end-of-summer 2026 timeline, pending permits. Menu features fresh pasta, housemade sauces, Italian sandwiches, salads, and tiramisu. This is the brand’s first Texas location, with a simultaneous San Antonio opening also planned.
