Fast-casual Mexican-fusion chain Bubbakoo’s Burritos is planning a new location at RK Hudson Towne Center in Hudson, MA. No opening date has been announced. This would be the first operating location in Massachusetts. The chain has 150+ locations in 17 states and originated in New Jersey in 2008.

Clark University graduate Darshan Mody plans to open Red Cup Coffee, a coffee shop and coworking space for entrepreneurs, on the ground floor of a three-decker at 304 Shrewsbury St. The space was formerly occupied by Central Mass Scuba. Opening planned for late August 2026.
